Ingredients

  • 1 pound (450g) flank steak, chicken breast, or firm tofu
  • 2 tablespoons olive oil
  • 3 tablespoons soy sauce or coconut aminos
  • 1 tablespoon honey or maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper

  • 1/2 teaspoon ground coriander
  • Salt and pepper to taste

  • 1/2 cup (120g) sour cream or Greek yogurt
  • 1/4 teaspoon ground cumin
  • Pinch of salt
  • 1-2 tablespoons milk or water (to adjust consistency)
  • For the Rain Salsa:
  • 2 tomatillos, husked and finely diced
  • 1/2 cup (80g) cucumber, seeded and diced
  • 1/4 cup (40g) red onion, finely diced
  • 1 jalapeño, seeded and minced
