• 2 tbsp Zaatar, Zaatar with Sumac, or add 1 tbsp Sumac. *Read Notes
• 2 tbsp Olive Oil
• 2 tsp Garlic, minced
• 1 Lemon, juice and zest, divided
• 1/2 tsp Cumin Powder
• 1/2 tsp Paprika, or 1/4 tsp regular chili powder. both optional.
• 1 lbs Potatoes, Yukon Gold Potatoes
• 1/2 tbsp Olive Oil
• 1/4 Cup Feta Cheese, crumbled
• Chives, or parsley for garnish
