Ingredients

• 1 pack Silver Fern Farms Beef Tenderloin Eye Fillet
• ¼ cup of pine nuts
• ¼ cup raisins
• 2 cloves garlic, finely chopped
• ¼ cup fresh parsley, finely chopped
• ¼ cup fresh basil leaves
• ½ cup parmesan
• 1 cup fresh mozzarella, sliced thinly
• 8 slices prosciutto or bacon
• 2 red onions, diced
• 2 cloves of garlic, crushed
• 1 Tbsp Olive oil
• ½ cup red wine
• 2 tins of tinned chopped tomatoes
• 2 Tbsp tomato paste
• 1 Tbsp sugar
• 1 Tbsp balsamic vinegar
