Ingredients

• 2 tablespoons olive oil
• 1 medium onion diced
• 1 green bell pepper diced
• 2 cloves garlic , finely chopped
• 2 tablespoons ground cumin
• 1 (28 oz) can crushed tomato es
• 1 (4 oz) can chopped, green chili peppers
• 1 (32 oz) box vegetable stock
• Salt to taste
• 1/2 cup frozen whole kernel corn
• 6 corn tortillas
• 2 tbsp vegetable oil
• 1 cup grated cheddar cheese
• 1 avocado - sliced
• Chopped cilantro
