• 3 large poblano peppers, seeded and finely diced
• 2 –3 jalapeño peppers, seeded and finely diced
• 1 large red onion, finely diced
• 1 bunch cilantro, chopped
• 4 cloves garlic, minced
• ½ cup red wine vinegar
• 2 tablespoons kosher salt
• 6 dried California chiles
