• 2 lb boneless skinless chicken thighs
• 1 cup Sweetwater Spice Ancho Chipotle Brine Concentrate
• 5 cups water
• Cattleman’s Grill Mexicano Seasoning
• 2 oz pepper jack cheese, grated
• 12 medium flour tortillas
• 1 lb tomatillos, husks removed
• 2 Anaheim peppers
• 2 jalapeño peppers
• 1/2 yellow onion, quartered
• 1/2 bunch cilantro, chopped
• 3 cloves garlic, smashed
• Jacobsen Salt Co. Kosher Sea Salt, to taste
• 2 tbsp unsalted butter
• 3 tbsp all purpose flour
• 1 cup chicken stock
• 1/2 cup sour cream
• 6 oz pepper jack cheese, grated
