• ½ cup olive oil
• 2 medium carrots peeled and diced
• 1 medium yellow onion diced
• 6 garlic cloves minced
• 1 3" piece ginger peeled and finely grated
• 2 plum tomatoes diced
• 2 scallions thinly sliced
• 1 Scotch bonnet pepper seeded and finely diced
• 6 sprigs fresh thyme
• 2 Tbsp. soy sauce
• 3 Tbsp. tomato paste
• 1 Tbsp. whole allspice berries
• 6 cups chicken stock
