Ingredients

• 4 lbs. boneless Beef Short Ribs, cut into 23” pieces
• Kosher salt and freshly ground black pepper
• 1/2 cup all-purpose flour
• 3 tbsp olive oil
• 10 oz fresh pearl onions, peeled
• 1-2 garlic cloves, chopped
• 3 tbsp tomato paste
• 2 cups red wine
• 6 cups Beef broth
• 4 sprigs rosemary, chopped finely
• 4 sprigs thyme, chopped finely
• Flaky sea salt, to garnish
