French apricot tart

Ingredients

• 200g pastry flour, sifted
• pinch salt
• 1 tablespoon sugar
• 100g unsalted butter, diced and chilled
• 1 egg lightly beaten
• 2 teaspoons water
• 6 egg yolks (discard the whites)
• 75g sugar
• 40g plain flour
• 40g cornstarch
• 600ml milk
• 125ml water
• 100g sugar, more if apricots are tart
• 700g apricots, halved and stoned, add face down
• 10g flaked almonds
