Sherry-Scented Mushroom & Barley Soup - Kake's (Vegan) Cookery Site

Ingredients

• 1/4 cup uncooked barley (or 2 cups cooked)
• 1 medium onion, chopped
• 2 cloves garlic, finely chopped
• 450g (1 lb) mushrooms, finely chopped
• 3 Tbsp good soy sauce
• 4-5 Tbsp sherry
• 1 litre (36 fl oz, 4 1/2 cups) water
• freshly ground black pepper
