• 2 scant cups dried coconut (such as Baker's Sweetened Angel Flake Coconut)
• 1 box Betty Crocker German Chocolate Cake mix
• 1 1/2 cups water
• 3 large eggs
• 1/2 cup vegetable oil
• 8 tablespoons butter melted (1 stick)
• 1 teaspoon pure vanilla extract
• 8 ounces cream cheese (at room temperature)
• 1 - 1 lb box confectioners sugar
