• 3 large poblano peppers
• 1 large yellow onion
• 1 teaspoon kosher salt

• 2 tablespoons olive oil
• 8 slices thick sliced white bread
• ½ cup mayo
• 1 cup shredded Quesadilla cheese
• 2 cups shredded Oaxaca cheese
• 1 cup black bean tortilla chips (crushed)
• Tomatillo salsa (optional for serving)
