- 250g unsalted butter, softened
- 200g soft light brown sugar
- 100g caster sugar
- 1/2 teaspoon of vanilla bean paste
- 3 medium egg yolks (I freeze my left over egg whites for another time)
- 325g plain flour
- 1 1/4 teaspoon of sea salt
- 3/4 teaspoon bicarbonate of soda
- 120g chewy toffees, I used M&S double Devon toffees
- 120g of dried apple slices
