Ingredients

  • 6 slices bacon (about 4 ounces/125g)
  • ¼ cup (50 mL) whole wheat flour
  • 1 teaspoon (5 mL) salt
  • ½ teaspoon (2 mL) cracked black peppercorns
  • ¼ teaspoon (1 mL) cayenne pepper
  • 2 pounds (1 kg) trimmed stew beef, cut in 1-inch (2.5 cm) chunks
  • 2 onions, finely chopped
  • 2 stalks celery, diced
  • 2 carrots, peeled and diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • ½ teaspoon (2 mL) freshly grated nutmeg
  • Grated zest and juice of 1 orange
  • 1 ½ cups (375 mL) wheat berries ( such as Khorasan wheat or spelt berries), rinsed and drained
  • 1 cup (250 mL) dry red wine
  • 1 can (5 ½ ounces/156 mL) tomato paste
  • 2 cups (500 mL) reduced-sodium beef stock
