Ingredients
- 6 slices bacon (about 4 ounces/125g)
- ¼ cup (50 mL) whole wheat flour
- 1 teaspoon (5 mL) salt
- ½ teaspoon (2 mL) cracked black peppercorns
- ¼ teaspoon (1 mL) cayenne pepper
- 2 pounds (1 kg) trimmed stew beef, cut in 1-inch (2.5 cm) chunks
- 2 onions, finely chopped
- 2 stalks celery, diced
- 2 carrots, peeled and diced
- 4 cloves garlic, minced
- 2 bay leaves
- ½ teaspoon (2 mL) freshly grated nutmeg
- Grated zest and juice of 1 orange
- 1 ½ cups (375 mL) wheat berries ( such as Khorasan wheat or spelt berries), rinsed and drained
- 1 cup (250 mL) dry red wine
- 1 can (5 ½ ounces/156 mL) tomato paste
- 2 cups (500 mL) reduced-sodium beef stock
