Ingredients

• ½ cup (125 ml) dry white wine

• ½ cup (75 g) unbleached all-purpose flour
• 2 ½ cups (625 ml) milk
• 1/8 tsp ground nutmeg
• ½ cup (35 g) fresh Pecorino cheese, grated
