SHEPHERDS PIE – Beneker Family Farms

Ingredients

• 2 Tbsp olive oil
• 1 medium yellow onion, diced
• 4 cloves garlic, minced
• 3 carrots, finely diced
• 3 ribs celery, finely diced
• 2 lbs ground beef
• 1 28 oz can diced tomatoes
• 2 Tbsp tomato paste
• 8-10 parsnips, peeled, cut into 1-inch slices
• 2 ½ cups chicken stock
• 4 cups thinly sliced green cabbage
• Salt and pepper, to taste
