Peanut Sweet Potato Soup | DeKam Family Favourites 2.0

Ingredients

• 2 Tbsp oil
• 2 large onions, diced.
• 2 red bell peppers, seeded and diced.
• 4 carrots, peeled and diced.
• 1-2 tsp cayenne pepper
• 1 tsp freshly ground black pepper
• 2 cloves garlic, minced.
• 2-3 tsp fresh ginger, peeled and grated.
• 2 large sweet potatoes, peeled and cubed.
• 10 cups of veggie or chicken broth
• 2 cans diced tomatoes, with juices.
• 1-1.5 cups peanut butter
• 4 tsp honey
• 1 cup chopped scallion greens
