Scissor-Cut Noodles with Umami Sauce Recipe | King Arthur Baking
Scissor-cut noodles or jian dao mian (剪刀面) are quick to make and have a delightfully chewy, bouncy texture. When you don’t know what to make for dinner, make these noodles!
Ingredients
- 3 1/3 cups (400g) King Arthur Unbleached Bread Flour
- 1 cup (227g) water, at room temperature
- 2 tablespoons (25g) neutral oil, such as vegetable or canola
- 2 tablespoons (14g) cornstarch
- 1/2 teaspoon table salt or 1 tablespoon red miso
- 2 tablespoons (34g) peanut butter, crunchy or creamy
- 2 tablespoons (28g) soy sauce
- 2 tablespoons (25g) sesame oil
- 1 tablespoon (14g) soy sauce, dark
- 1 tablespoon (14g) Shaoxing wine
- 1 1/2 tablespoons (19g) granulated sugar
- 1/2 teaspoon MSG, optional
- neutral oil, such as vegetable or canola
- chopped vegetables, pre-cooked
- proteins, pre-cooked
- scallions, chopped; for garnishing
- sesame seeds, for garnishing
- chili crisp, for drizzling
