Based on the traditional way of making Callaloo in the Caribbean, especially Trinidad and Tobago, but we'll be using Lobster instead of the typical Crab.
Ingredients
- 4 lobster tails
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 stalk celery
- 1 medium onion
- 4 cloves garlic
- 2 shado beni leaves
- 1/4 Scotch Bonnet pepper
- 4-6 sprigs thyme
- 1/2 teaspoon black pepper
- 3/4 teaspoon salt
- 1 lb baby spinach
- 2 cups sweet potato
- 2 cups pumpkin
- 2 cups water
- 1 1/2 cups coconut milk
- 1 1/2 cups seafood stock
