Ingredients

• 1 tablespoon olive oil
• 1 onion, diced
• 1 large garlic clove, minced
• 1 teaspoon cumin
• 1 teaspoon turmeric
• 1 cup carrots, diced
• 1 cup potatoes, diced
• 1 ½ cup red lentils, rinsed
• 5 cups vegetable broth or hot water
• ¾ to 1 teaspoon salt, to taste
• ⅛ teaspoon freshly ground black pepper, to taste
• ½ lemon, juiced
• Handful chopped cilantro or parsley, for garnish
