  • 3 large boneless chicken breasts (about 3¼ lb.), butterflied

  • 2 tbsp. all purpose flour
  • 1 cup whole milk, warm
  • Pinch of kosher salt
  • Pinch of sugar sugar
  • ¾ cups finely chopped yellow onion
  • 1½ cups fresh corn kernels (from 2 medium cobs)
  • ¼ cups heavy cream
  • 2 large eggs, beaten
  • 2 large ripe bananas, cut on the diagonal into 1-in. thick slices
  • Canola oil, for frying
  • 3 large russet potatoes (about 2¾ lb.), cut into fine shoestrings
