• 1 1/2 tsp baking soda
• 2 tsp ground cinnamon
• 1 tsp ground ginger
• 1/4 tsp all spice
• pinch freshly grated nutmeg
• 1/2 tsp salt
• 11 tbsp unsalted butter, room temperature 6oz / 174g
• 1 cup packed brown sugar 5.7oz / 162g
• 1/2 cup molasses 5.5oz / 155g
• 1/2 cup crystallized ginger, small dice
