Ingredients

• 24 large button mushrooms, about 2 pounds
• 4 tablespoons extra virgin olive oil, divided
• 3/4 pound sweet Italian sausage, removed from thae casing
• 1 medium onion , finely chopped
• 3 garlic cloves , minced
• 1/3 cup oil packed sun-dried tomatoes, drained and chopped
• 1/2 cup panko breadcrumbs
• 5 ounces cream cheese , softened
• 1/3 cup grated Pecorino Romano , cheese
• 3 tablespoons chopped parsley
