Ingredients

• 1 tbsp coconut oil
• 2 cardamom pods
• 2 star anise
• 2 tsp coriander seeds
• 1 tsp cumin seeds
• 1 tsp turmeric
• 2 tsp curry powder
• 1 yellow onion, finely chopped
• 1 garlic clove, finely chopped
• 2 tbsp ginger, diced
• 1/2 chili pepper, finely diced
• 5.6 oz red lentils
• 6.8 oz canned/fresh coconut milk
• 10 fl oz vegetable stock
• 5.3 oz baby spinach, washed and drained
