Bar Nothing Ranch Risotto – Miss BeHavin's Haven

Ingredients

• 10 cups water
• ¼ oz Telma Chicken Consomme
• 1 medium Texas 1015 onion, chopped small
• 2 cloves garlic, smashed but left whole
• ½ stick unsalted butter
• 1 tsp olive oil
• 1 cup arborio rice
• ¾ cup half and half
• 1 tsp kosher salt
• 2 tbsp Hidden Valley Ranch Seasoning and Dressing Mix
• ¼ tsp cayenne pepper
• ¾ cup aged white cheddar, grated
• 2 tbsp fresh chives, diced fine
• 2 tbsp Parmigiano Reggiano, grated fine, buy the good stuff for this dish
