Beef Bourguignon - InstaPot

Ingredients

• 1 1/2-2 lbs beef chuck roast, cut into 3/4 inch cubes
• 5 slices bacon, diced
• 1 small onion, chopped ( about 4 oz )
• 8 oz cremini mushrooms, quartered
• 2 carrots, chopped
• 5 cloves garlic, minced
• 3 bay leaves
• 1 c dry red wine
• 1 Tbs tomato paste
• 1 tsp beef bullion (optional)
• 1 tsp dried thyme
• 3/4 tsp xanthan gum or 2 Tbs cornstarch
• 1 tsp salt
• pepper
• chopped fresh parsley for garnish
