Abuela's Pollo Guisado: Puerto Rican Comfort in a Bowl
My Abuela's Pollo Guisado recipe! This Puerto Rican chicken stew is proper comfort food, ready in just over an hour.
Ingredients
- 2 lbs (900g) bone-in, skin-on chicken pieces (thighs and drumsticks work best)
- 1 tbsp (15ml) olive oil
- 1 tsp kosher salt
- ½ tsp black pepper
- 1 tsp smoked paprika
- 1 medium yellow onion, finely diced (about 1 cup)
- 1 green bell pepper, finely diced (about ¾ cup)
- 1 red bell pepper, finely diced (about ¾ cup)
- 4 cloves garlic, minced
- 2 tbsp (30ml) olive oil
- 1 tsp dried oregano
- 1/2 tsp cumin
- 1/4 tsp chili flakes (optional, for a bit of a kick, bruv)
- 1 (14.5 oz / 411g) can diced tomatoes, undrained
- 1 (8 oz / 227g) can tomato sauce
- 1 lb (450g) Yukon Gold potatoes, peeled and cut into 1-inch cubes
- 1 cup chicken broth (low sodium preferred)
- 1/2 cup frozen peas
- 1/4 cup chopped fresh cilantro, for garnish
- Lime wedges, for serving (optional)
