Ingredients

  • 2 lbs (900g) bone-in, skin-on chicken pieces (thighs and drumsticks work best)
  • 1 tbsp (15ml) olive oil
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 medium yellow onion, finely diced (about 1 cup)
  • 1 green bell pepper, finely diced (about ¾ cup)
  • 1 red bell pepper, finely diced (about ¾ cup)
  • 4 cloves garlic, minced
  • 2 tbsp (30ml) olive oil
  • 1 tsp dried oregano
  • 1/2 tsp cumin
  • 1/4 tsp chili flakes (optional, for a bit of a kick, bruv)
  • 1 (14.5 oz / 411g) can diced tomatoes, undrained
  • 1 (8 oz / 227g) can tomato sauce
  • 1 lb (450g) Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 cup chicken broth (low sodium preferred)
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh cilantro, for garnish
  • Lime wedges, for serving (optional)
