After Saladay, Annie Pannie was most proud of her salad with fresh figs and goat cheese balls. Anyway, figs are of course ultra photogenic. But the spiced goat cheese balls with pistachio crumbs also...
Ingredients
- 1 large bag of rocket
- 1 crisp-sweet apple
- 3 fresh figs
- 125 g Bettine fresh goat's cheese natural
- 2 tbsp lemon juice
- 1 tbsp olive oil
- salt and pepper
- 2 tsp. sumac (on sale at Turkish and Moroccan shops)
- handful of pistachios (unsalted)
- 1 tbsp finely chopped fresh dill, plus some extra dill tips to garnish
- 1 handful of pomegranate seeds
