A nutritious dish with some ingenious touches. Green tea, coconut milk and miso liven up fish, rice and vegetables in just fifteen minutes.
Ingredients
- 4 x 120g salmon fillets, skin-on
- 2 green tea bags
- olive oil
- salt and pepper
- 300g basmati rice
- 400g tin of coconut milk
- ½ lemon
- 1 red chili
- thumb sized piece ginger, peeled
- 1 tbsp miso paste
- 1 heaped tsp honey
- 2 tbsp light soy sauce
- juice from ½ a lemon
- large handful of coriander
- 200g mangetout or sugar snap peas
- 200g broccoli
- 300g asparagus
