Silky and Delicious Mexican Queso Dip

Ingredients

• 1/4 tsp onion powder
• 1/2 tbsp / 8 g unsalted butter
• 2.5 cups / 225 g shredded cheese (combination of Cheddar, Monterey Jack, and Colby)
• Salt to taste
• 1 large garlic clove, minced
• 13 oz / 375 g evaporated milk (1 can)
• 1 small tomato, finely diced (3/4 cup)
• 1/4 cup coriander / cilantro, finely chopped
• 1/4 tsp cumin
• 1/4 tsp garlic powder
• 4 oz / 113g can chopped green chile, fire roasted
• 1/4 small white onion, very finely chopped (1/4 cup)
• 2 - 3 tbsp whole milk
• 1 tbsp cornstarch
