Smothered Potatoes With Smoked Sausage Recipe

Ingredients

• 2 and 1/2 pounds Idaho potatoes, peeled
• 1 pound heavy smoked sausage, thinly sliced
• 6 cups chicken stock
• 1/4 cup bacon fat or vegetable oil
• 2 cups diced red onions
• 1 cup diced celery
• 1/2 cup red bell pepper, diced
• 1/2 cup yellow bell pepper, diced
• 1/2 cup thinly sliced garlic
• 1 tbsp minced fresh rosemary leaves
• salt and black pepper to taste
• granulated garlic to taste
• 3/4 cup chopped green onions
• 1/2 cup minced parsley
