• 200g couscous
• 1 vegetable stock cube
• 3 courgettes, thinly sliced lengthways
• 1 tbsp olive oil
• handful mint, leaves picked
• 150g (5oz) baby plum tomatoes, halved
• 50g (2oz) halved walnuts, toasted
• 100g (3 1/2oz) feta
• 3 tbsp olive oil
• 1 tbsp lemon juice
• 1 tbsp finely chopped mint
• 1/2 tbsp finely chopped basil
• 1 garlic clove, crushed
