Here’s a fun twist on spaghetti and meatballs with chicken parm recipe. We combine the two recipes into a new dish we call chicken meatball parmigiana. Serve with your favorite pasta and Jar Goods...
Ingredients
- ⅓ C panko style breadcrumbs
- ½ C ricotta
- ½ C grated parmesan cheese
- 1 large egg
- ½ cup crumbled firm tofu
- 2 tbsp finely chopped garlic
- 1 tbsp spoon chopped parsley
- 1 red bell pepper, sliced lengthwise
- ¾ lbs ground chicken (not lean)
- 2 tbsp olive oil
- 1 jar Classic Red or Classic Spicy
- 4 oz mozzarella cheese, shredded
