• 2 bananas shallots, finely chopped
• 2 garlic cloves, finely chopped
• 500 g mixed mushrooms
• 200 g risotto rice
• 200 ml white wine
• 1 l chicken broth
• 175 g cheddar cheese, grated
• 2 tsp lemon zest
• 100 ml double cream
• 1 handful chopped fresh parsley
• 1 tsp coarse salt
• freshly ground pepper
• 240 g bread
