• 2 medium onion

• 2 thumbs ginger
• 2 Tbs grapeseed oil
• 1 tsp cumin powder
• 2 Tbs curry powder
• 1/2 tsp salt
• 1/4 tsp black pepper
• 1 reduced sodium vegetable bouillon
• 1/4 cup water
• 1 small pineapple or 425g tin of pineapple slices in juice
• 1/2 cup chopped celery
• 3 small capsicum
• 1 whole cauliflower
• 300g tofu
• 1/4 cup lite coconut milk
• 1 cup So Good Oat Unsweetened
• Coriander (topping)
