Courgette, Sultana & Pecan Cake
Try this easy courgette cake. It's our grower's favourite.
Ingredients
- 2 Large eggs
- 125ml vegetable oil
- 85g Soft brown sugar
- 350g courgette
- 1tsp Vanilla extract
- 300g plain flour
- 0.5tsp ground cinnamon
- 0.25tsp ground nutmeg
- 0.5tsp bicarbonate of soda
- 0.5tsp baking powder
- 85g pecan nuts
- 140g Sultanas
