Chicken Tortilla Soup with Avocado Cream

Ingredients

• 1 Hass avocado
• 3 tablespoons sour cream
• 1 tablespoon lemon juice
• 2 tablespoons olive oil
• 1 large yellow onion, diced small
• 2 quarts chicken stock
• 1 cup fresh corn
• 2 garlic cloves, minced
• 1 teaspoon cumin
• 2 poblano peppers, roasted, peeled, seeded, and diced into ½-inch pieces
• 2 tablespoons chipotles in adobo
• 1 tablespoon tomato paste
• 1/3 cup cilantro, chopped
• 2 tablespoons Lime juice
• 3 corn tortillas, cut into strips and baked until crispy
• 2 Chicken breasts, grilled and cut into 1-inch pieces
• Kosher salt, to taste
