- 1 tsp demerara sugar
- 2 tbsp icing sugar
- 250 ml/9 fl oz/1 cup double cream
- 6 small or 3 medium figs
- ¼ tsp ground ginger
- 150 g/5½ oz puff pastry, defrosted if frozen
- flour, for dusting
- ½ tsp ground cinnamon
