• 1½ lbs. of large shrimp peeled, deveined with tail removed
• 1½ tbsp olive oil
• 1 tbsp Big Green Egg Citrus and Herb Seasoning
• 2 fresh limes, cut into quarters
• 1/3 cup chopped cilantro
• ½ cup crumbled Cotija cheese
• 6 corn tortillas
• 1 16 oz bag of coleslaw mix
• 1 jalapeño pepper, seeded and chopped thin
• 2 garlic cloves, minced
• ½ cup mayonnaise
• ½ cup chopped cilantro
• ½ tsp ground cumin
• ½ tsp fine sea salt
• ¼ tsp freshly-cracked black pepper
• 3 green onions, just the green parts, sliced
• ½ lime, juiced
