• ½ red onion, chopped
• ½ small red pepper, deseeded and diced
• ½ small yellow pepper, deseeded and diced
• 50g courgette, diced
• 50g brown mushrooms, diced
• 1 tsp chopped fresh thyme
• 1 tsp garlic purée
• 2 English muffins
• 4 tbsp passata
• 1 tbsp sundried tomato paste
• 30g Cheddar, grated
• 30g mozzarella, grated
• Black olives, fresh basil leaves, mini mozzarella balls, pieces of red pepper, to decorate (optional)
