Ingredients

  • 6-8 slices of bacon
  • Two 6.5 ounce cans of minced clams
  • 1 ¼ cup of chicken broth
  • 2 small or 1 medium Yukon gold potato (peeled, diced and chopped)
  • 2 large celery sticks, sliced
  • 1 large or 2 small carrots, peeled and sliced (optional)
  • 4-6 tablespoons butter
  • 2 gloves garlic, minced
  • 1 small red onion or 2 shallots, diced
  • ½ cup fresh or defrosted corn (optional)
  • 1 teaspoon dried oregano
  • 1 cup half and half
  • Salt and pepper to taste
  • 2 tablespoons parsley or basil, chopped (for garnish)
