• 4 tsp cajun seasoning
• 4 hard-boiled eggs, peeled and chopped
• 1 small jalapeño pepper, seeded and diced
• 1 small red onion, diced
• 1 ½ cups shredded Monterey Jack cheese
• 1 ½ cups drained canned corn kernels
• 2 scallions, chopped, divided
• 3 tbsp chopped cilantro, divided
• 2 tbsp chopped fresh parsley, divided
• 1 tsp salt
• 1/4 tsp black pepper
