Ingredients

• 1 cup all-purpose flour, plus more for dusting 250 mL
• ¼ tsp salt 1 mL
• ½ cup cold unsalted butter, cut into cubes 125 mL
• 2 ripe peaches, pitted, peeled and sliced into thin wedges
• 1 tbsp honey 15 mL
• 1 tbsp sugar 15 mL
• 1 tsp chopped fresh thyme 5 mL
• 1 tsp cornstarch 5 mL
• 2 cans triple-cream brie cheese, cut into ½-in/1-cm cubes 60 g
