• 3-4 pork neck bones
• 2 tablespoons vegetable oil
• 1 shallot, thinly sliced
• 1 tablespoon fish sauce
• 1 tablespoon mushroom seasoning
• Sea salt and black pepper to taste
• 3 carrots, peeled and diced
• 2 beets, peeled and diced
• 3 potatoes, peeled and diced
• 1 chayote squash, peeled, seeded and diced
• ½ cup chopped Chinese celery
• ½ cup chopped green onion
