- Smoked haddock fillet (skinned and boned) 250 g
- Fish stock 500 ml
- Dry white wine 100 ml
- Parsley (finely chopped) 2 tbsp
- Butter 50 g
- Plain flour 50 g
- Double cream 175 ml
- English mustard 2 tsp
- Worcestershire sauce 1 tsp
- Anchovy essence 1 tsp
- Salt and pepper Not too little Not too much
- White breadcrumbs 25 g
- Lancashire cheese (grated) 25 g
