Pumpkin and Orange Soup | Yuzu Bakes

Ingredients

• 1 medium pumpkin, washed, deseeded and cubed (with skin on)
• 3 medium oranges, juiced
• 1 medium onion, finely chopped
• 3 cloves of garlic, chopped
• 1 inch ginger, finely chopped
• 1 chilli, chopped
• 5 1/2 cups vegetable stock
• 1 tbsp olive oil
• salt and pepper to taste
