Hushpuppies With Maple Butter – Simmer + Sauce

Ingredients

• For the Hushpuppies:
• 2 3/4 cups organic medium-grind corn meal
• 1 1/2 cups all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 2 teaspoons sugar
• 1 1/4 teaspoon Kosher salt
• 1/4 teaspoon freshly gorund black pepper
• 2 eggs, beaten
• 1 1/2 cups buttermilk
• 1/2 cup whole milk
• 1 1/2 cups grated Monterey jack cheese
• Vegetable oil, for frying
• For the Maple Butter:
• 8 tablespoons unsalted butter, room temperature
• 3 tablespoons good quality maple syrup
