Tomatoes Florentine - spinach stuffed tomatoes with Parm cheese.

Ingredients

• 6 tomatoes
• 2 teaspoons olive oil
• 1 onion (small, finely chopped)
• 1 clove garlic (minced)
• 12 ounces frozen spinach (chopped, thawed & drained)
• pulp that you have removed from the tomatoes (chopped )
• salt & pepper to taste
• 2 tablespoons dry bread crumbs (plain or Italian style)
• 2 tablespoons fresh parsley (chopped)
• 2 teaspoons Parmesan cheese (grated)
