For the Jewish community of northern Italy, frisinsal (Pharaoh’s wheel) is a very significant dish. Anne Shooter's version uses chicken, too.
Ingredients
- 1–4 tbsp olive oil, plus extra for greasing
- 450g sausage meat or 8 beef or chicken sausages
- 100g pine nuts
- 100g flaked almonds
- 3 rosemary sprigs, leaves picked and chopped
- 350g (or thereabouts) shredded leftover roast chicken, with the pan juices if you have them (or use salami, cut into pieces)
- 500g fresh tagliatelle
- salt and freshly ground black pepper
- 100g sultanas (golden are best, if you can get them), plumped in hot water for 20 minutes and drained
