Ingredients

  • 1–4 tbsp olive oil, plus extra for greasing
  • 450g sausage meat or 8 beef or chicken sausages
  • 100g pine nuts
  • 100g flaked almonds
  • 3 rosemary sprigs, leaves picked and chopped
  • 350g (or thereabouts) shredded leftover roast chicken, with the pan juices if you have them (or use salami, cut into pieces)
  • 500g fresh tagliatelle
  • salt and freshly ground black pepper
  • 100g sultanas (golden are best, if you can get them), plumped in hot water for 20 minutes and drained
