Spicy Apple, Fennel and Kale Salad with Apple Cider Vinaigrette
This spicy, sweet, tart, crunchy salad, pretty enough for a holiday party, also helps balance out rich foods with ingredients beneficial to digestion.
Ingredients
- 1/2 fennel bulb, chopped
- 1/2 tart green apple (Granny Smith), chopped
- 2 -3 cups baby kale, thinly sliced
- 1 tsp fresh ginger, grated
- 1 Serrano chili pepper, seeded and chopped (leave seeds in for extra heat)
- 1 – 2 TB dried cranberries
- fennel fronds for garnish
